  • 2 large eggs

  • ½ teaspoon Italian seasoning or dried herbs (optional)

Instructions

Step 1: Preheat the Oven

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.

Step 2: Blend the Ingredients

In a blender or food processor, combine cottage cheese, eggs, salt, and optional seasonings. Blend until smooth and creamy. The mixture should have a pancake batter-like consistency.

Step 3: Form the Flatbreads

Pour the batter onto the lined baking sheet, forming four small circles or one large rectangle. Use a spoon to spread them into thin, even layers (about ¼-inch thick).

Step 4: Bake Until Set

Place the baking sheet in the oven and bake for 20–25 minutes, or until the edges are golden and the center is firm to the touch.

Step 5: Cool and Serve

Let the flatbreads cool for a few minutes before carefully peeling them off the parchment paper. Use them for wraps, sandwiches, or mini pizzas!

Notes

For Crispier Flatbread: Bake for an additional 5 minutes, or toast in a dry skillet after baking.
For a Fluffier Texture: Add ½ teaspoon of baking powder to the batter before blending.
Storage: Keep in an airtight container in the fridge for up to 4 days.
Freezing Instructions: Place parchment paper between each flatbread and store in a freezer-safe bag for up to 2 months.
