This Cottage Cheese Flatbread is an easy, high-protein, and low-carb alternative to traditional bread. Made with just a few simple ingredients, it’s soft, flexible, and perfect for wraps, sandwiches, or even mini pizzas. Plus, it’s gluten-free and can be customized with your favorite herbs and spices.
Ingredients
- 1 cup full-fat cottage cheese
- 2 large eggs
- ¼ teaspoon salt (adjust to taste)
- ½ teaspoon garlic powder (optional, for flavor)
- ½ teaspoon onion powder (optional, for flavor)
- ½ teaspoon Italian seasoning or dried herbs (optional)
Instructions
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.
In a blender or food processor, combine cottage cheese, eggs, salt, and optional seasonings. Blend until smooth and creamy. The mixture should have a pancake batter-like consistency.
Pour the batter onto the lined baking sheet, forming four small circles or one large rectangle. Use a spoon to spread them into thin, even layers (about ¼-inch thick).
Place the baking sheet in the oven and bake for 20–25 minutes, or until the edges are golden and the center is firm to the touch.
Let the flatbreads cool for a few minutes before carefully peeling them off the parchment paper. Use them for wraps, sandwiches, or mini pizzas!
