Ingredients

  • 2 large English cucumbers, thinly sliced
  • ½ red onion, thinly sliced
  • ¼ cup apple cider vinegar (or white vinegar)
  • 1 tablespoon olive oil
  • 1 teaspoon sugar or honey
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh dill, chopped

Instructions

  • Prepare the cucumbers & onions – Thinly slice cucumbers and onions using a sharp knife or mandoline.
  • Make the dressing – In a large bowl, whisk together vinegar, olive oil, sugar, salt, and black pepper.
  • Combine ingredients – Add the cucumbers and onions to the bowl. Toss everything together until evenly coated.
  • Chill & serve – Let the salad sit in the fridge for at least 15-30 minutes for flavors to meld. Sprinkle with fresh dill before serving.

Notes

For extra crunch, salt the cucumber slices and let them sit for 10 minutes before rinsing and using.
Make it ahead! This salad tastes even better after a few hours but is best consumed within 24 hour
