- 2 large English cucumbers, thinly sliced
- ½ red onion, thinly sliced
- ¼ cup apple cider vinegar (or white vinegar)
- 1 tablespoon olive oil
- 1 teaspoon sugar or honey
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons fresh dill, chopped
Instructions
- Prepare the cucumbers & onions – Thinly slice cucumbers and onions using a sharp knife or mandoline.
- Make the dressing – In a large bowl, whisk together vinegar, olive oil, sugar, salt, and black pepper.
- Combine ingredients – Add the cucumbers and onions to the bowl. Toss everything together until evenly coated.
- Chill & serve – Let the salad sit in the fridge for at least 15-30 minutes for flavors to meld. Sprinkle with fresh dill before serving.

✅ For extra crunch, salt the cucumber slices and let them sit for 10 minutes before rinsing and using.
