Ingredients

Scale
  • 1 cup almond flour
  • ½ cup tapioca starch (or arrowroot starch)
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon ground cinnamon (optional)
  • 1 pinch of salt

Instructions

  • Prepare the Dough:
In a medium bowl, combine almond flour, tapioca starch, cinnamon, and salt. Stir to blend the dry ingredients evenly. In a separate small bowl, mix melted coconut oil, honey (or maple syrup), and vanilla extract. Pour the wet ingredients into the dry mixture and stir until a dough forms.
  • Roll and Cut:
Place the dough between two sheets of parchment paper. Roll it out to about 1/8-inch thickness. Remove the top layer of parchment paper and use animal-shaped cookie cutters to cut out shapes. Carefully transfer the shapes onto a parchment-lined baking sheet.
  • Bake:
Preheat your oven to 325°F (160°C). Bake the crackers for 10-12 minutes or until the edges are slightly golden.
  • Cool and Store:
Allow the crackers to cool completely on the baking sheet before serving. Store in an airtight container at room temperature for up to one week.

Notes

  • If the dough is sticky, chill it in the refrigerator for 10-15 minutes before rolling.
  • For extra crunch, leave the crackers in the oven (turned off) for an additional 5 minutes after baking.
  • Feel free to customize the flavor by adding a pinch of nutmeg or swapping vanilla for almond extract.
