Ingredients

Scale

Dry Ingredients:

  • 1 cup almond flour
  • ½ cup tapioca flour
  • ½ teaspoon xanthan gum
  • ¼ teaspoon baking powder
  • ½ teaspoon salt

Wet Ingredients:

  • 1 cup sharp cheddar cheese, finely grated
  • 2 tablespoons unsalted butter (softened) or coconut oil for dairy-free
  • 1 large egg yolk
  • 2 tablespoons cold water

Optional Seasonings:

  • ¼ teaspoon paprika
  • ¼ teaspoon onion powder

Instructions

Step 1: Prepare the Dough

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together almond flour, tapioca flour, xanthan gum, baking powder, salt, and any optional seasonings.
  3. In a food processor, pulse the cheddar cheese and butter until crumbly. Add the egg yolk and dry mixture, pulsing until the dough starts to come together. Add water one tablespoon at a time, as needed, to form a soft dough.

Step 2: Roll and Cut

  1. Place the dough between two sheets of parchment paper. Roll it out to about ⅛-inch thickness.
  2. Use a small fish-shaped cookie cutter (or any shape you like) to cut out the crackers. Gather scraps, re-roll, and cut until all dough is used.

Step 3: Bake

  1. Transfer the shaped crackers to the prepared baking sheet, leaving a small space between each.
  2. Bake for 10–12 minutes or until the edges are golden and crisp. Keep a close eye on them to avoid burning.
  3. Let the crackers cool completely on the baking sheet before enjoying.

Notes

  • Storage: Store in an airtight container at room temperature for up to 5 days or freeze for up to 3 months.
  • Cheese Options: For different flavors, try parmesan, gouda, or a vegan cheddar substitute.
  • Rolling Tip: Keep the dough chilled for easier handling, especially in warm kitchens.
