Ingredients
Scale
Dry Ingredients
- 1 ½ cups gluten-free all-purpose flour (with xanthan gum)
- ¼ cup almond flour
- 2 tablespoons tapioca starch
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon sugar
Wet Ingredients
- 2 large eggs (room temperature)
- ¾ cup warm dairy-free milk (e.g., almond milk or oat milk)
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
Additional Ingredients
- 1 egg (for egg wash, optional)
- Sesame seeds or poppy seeds (optional, for garnish)
Instructions
Step 1: Prepare the Dough
- In a large mixing bowl, whisk together the gluten-free all-purpose flour, almond flour, tapioca starch, baking powder, salt, and sugar.
- In a separate bowl, mix the eggs, warm dairy-free milk, olive oil, and apple cider vinegar until well combined.
Step 2: Combine Ingredients
- Gradually add the wet ingredients to the dry ingredients, stirring with a wooden spoon or spatula until a dough forms.
- Knead lightly in the bowl for 2–3 minutes until the dough is smooth and slightly sticky.
Step 3: Shape and Proof
- Divide the dough into 8 equal portions and roll each into a ball.
- Place the dough balls on a parchment-lined baking sheet, leaving space between them. Cover with a clean kitchen towel and let proof in a warm area for 45 minutes, or until slightly risen.
Step 4: Bake
- Preheat the oven to 375°F (190°C).
- Brush the tops of the buns with an egg wash (or dairy-free milk for a vegan option) and sprinkle with sesame or poppy seeds, if desired.
- Bake for 18–20 minutes, or until golden brown and firm to the touch.
Step 5: Cool and Serve
- Allow the buns to cool on a wire rack for at least 10 minutes before slicing.
Notes
- For softer buns, cover the buns with a damp towel immediately after removing them from the oven.
- If you prefer sweeter buns, add an extra tablespoon of sugar to the dry ingredients.
- Store leftovers in an airtight container for up to 3 days, or freeze for up to 1 month.
