Description
Gluten-free Uncrustables are a game-changer for busy parents, snack lovers, and anyone managing a gluten-free diet. These crustless, sealed sandwiches are easy to make, customizable, and perfect for lunches, snacks, or on-the-go meals. With this recipe, you can create fresh, allergy-friendly sandwiches tailored to your preferences—all while saving money compared to store-bought versions.
Ingredients
Scale
- 8 slices gluten-free bread (e.g., Schär, Udi’s, or homemade)
- ½ cup creamy peanut butter (or alternative like almond butter or SunButter)
- ½ cup fruit jam or jelly (choose your favorite flavor)
- Optional: 1 tablespoon chia seeds or flaxseeds for added nutrition
Instructions
- Prepare the Bread:
Lay out your gluten-free bread slices on a clean surface. Make sure the slices are firm but fresh to prevent tearing during assembly. - Spread the Fillings:
- Spread 1 tablespoon of peanut butter (or your chosen alternative) evenly on one side of each slice of bread, leaving a small border around the edges.
- On four of the slices, add 1 tablespoon of jam or jelly on top of the peanut butter, spreading it evenly. If you’re adding chia seeds or flaxseeds, sprinkle a pinch over the jam.
- Assemble the Sandwiches:
Place the remaining four slices of bread on top to form sandwiches, with the peanut butter sides facing inwards. Gently press down to secure the layers. - Cut and Seal:
Use a sandwich cutter or a small round bowl to cut out the center of each sandwich, removing the crusts. Firmly press the edges to seal the sandwich and create the classic uncrustable look. - Serve or Store:
Serve immediately, refrigerate for up to 3 days, or freeze for meal prep (see notes for freezing tips).
Notes
- Custom Fillings: Try variations like Nutella with banana slices, cream cheese with strawberries, or hummus with roasted veggies for a savory twist.
- Freezing Tips: To freeze, wrap each uncrustable individually in plastic wrap, then place them in a freezer-safe bag. Thaw at room temperature for 30 minutes or overnight in the fridge.
- Preventing Leaks: Avoid overfilling to ensure the sandwiches seal properly without spilling.
