These guava jelly muffins are a delightful tropical treat, perfect for breakfast, snacks, or dessert. Whether you enjoy them warm with coffee or as an on-the-go treat, these muffins are simple to make and bursting with flavor.

Ingredients

Scale

Dry Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup granulated sugar

Wet Ingredients:

  • ½ cup (1 stick) unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup whole milk (or buttermilk for extra softness)
  • ⅓ cup Greek yogurt or sour cream

Guava Jelly Swirl:

  • ½ cup guava jelly, slightly warmed for easy swirling

Instructions

Step 1: Prep the Muffin Tin

  1. Preheat your oven to 375°F (190°C).
  2. Line a 12-cup muffin tin with paper liners or grease with non-stick spray.

Step 2: Mix the Dry Ingredients

  1. In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar until evenly combined.

Step 3: Combine Wet Ingredients

  1. In a separate bowl, whisk together melted butter, eggs, vanilla, milk, and yogurt until smooth.

Step 4: Make the Batter

  1. Slowly pour the wet ingredients into the dry ingredients, mixing gently with a spatula until just combined. Avoid overmixing, as this can make the muffins dense.

Step 5: Add the Guava Jelly Swirl

  1. Fill each muffin cup halfway with batter.
  2. Spoon ½ teaspoon of guava jelly into the center of each.
  3. Top with the remaining batter until each cup is about ¾ full.
  4. Use a toothpick or skewer to gently swirl the jelly into the batter for a marbled effect.

Step 6: Bake the Muffins

  1. Bake for 18-22 minutes, or until a toothpick inserted comes out clean (except for melted guava jelly).
  2. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use room temperature ingredients – This helps the batter mix evenly and results in softer muffins.
For extra moist muffins, use buttermilk instead of regular milk.
Don’t overmix! Stir gently to avoid dense muffins. A few lumps in the batter are okay.
If your guava jelly is too runny, refrigerate it for 10 minutes before swirling.
For a creamier version, add a teaspoon of cream cheese in the center before baking.
