Ingredients
For the Chicken:
- 2 large boneless, skinless chicken breasts, sliced into cutlets
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon Italian seasoning
- ¼ cup all-purpose flour (for dredging)
- 2 tablespoons olive oil
- 1 tablespoon butter
For the Sauce:
- 3 cloves garlic, minced
- 1 cup chicken broth (or dry white wine)
- ¾ cup heavy cream
- ½ cup grated Parmesan cheese
- ½ cup sun-dried tomatoes, chopped
- ½ teaspoon red pepper flakes (optional, for spice)
- ½ teaspoon Italian seasoning
- Fresh basil or parsley, for garnish
Instructions
1️⃣ Prepare the Chicken
- Slice the chicken breasts in half lengthwise to create thin cutlets.
- Season both sides with salt, pepper, garlic powder, and Italian seasoning.
- Dredge each piece lightly in flour, shaking off any excess.
2️⃣ Cook the Chicken
- Heat olive oil and butter in a large skillet over medium-high heat.
- Sear the chicken for 4-5 minutes per side, until golden brown and cooked through (165°F internal temperature). Remove from the skillet and set aside.
3️⃣ Make the Creamy Sauce
- In the same skillet, add garlic and sauté for 30 seconds until fragrant.
- Pour in chicken broth (or white wine) to deglaze the pan, scraping up any browned bits.
- Stir in sun-dried tomatoes, red pepper flakes, and Italian seasoning. Let simmer for 2 minutes.
- Reduce heat to low, then add heavy cream and Parmesan cheese. Stir until smooth.
4️⃣ Combine & Serve
- Return the cooked chicken to the skillet, spooning the sauce over the top.
- Let it simmer for 5 minutes until the flavors meld together.
- Garnish with fresh basil or parsley, and serve hot with pasta, rice, or veggies.
Notes
✔️ Chicken Options: Swap chicken breasts for chicken thighs for a juicier, richer dish.
✔️ Lighter Version: Use half-and-half instead of heavy cream.
✔️ Storage: Refrigerate leftovers in an airtight container for up to 3 days. Reheat gently on the stovetop with a splash of broth.
✔️ Spice Level: Adjust red pepper flakes to taste—add more for a spicy kick or leave them out for a milder sauce.
